- 5 / 5By Mary ThomasonToday, I had the most delicious brisket I have ever eaten, with the perfect mix of slow-cooked beef, mouth-watering fat cap, and that lovely char that only brisket can produce. Kentucky Hillbilly BBQ, with newly opened locations in Bardwell and Wickliffe, KY, also offers barbecued pork, chicken, ribs, ham and stick bologna, and custom cooking. So far, I have only had their brisket sandwich ($4.50), but Kentucky Hillbilly easily earns five stars: on my scorecard, if a restaurant (or in this case, a food truck) gets the brisket right, everything else falls into place.
